Ingredients for 6 servings: 1 apple
300 gr fresh pineapple (cleaned)
1 orange
1 lemon
7.5 dl champagne
200 gr sugar
2 dl water
1 egg white
Lemon slices
Mint leaves
Ready in: about 40 minutes
How to prepare the recipe: "Champagne and pineapple sorbet":
Peel the apple, remove the core and cut in little pieces. Similarly cut the pineapple and put everything into a bowl.
Squeeze the orange, the lemon and pour the juice over the fruit.
Add champagne, keeping aside half glass; cover with plastic film and let soak in the refrigerator for an hour.
Add sugar, stir and whisk for some minutes; add 2 dl of cold water and transfer into the ice cream maker for the time requested by the instructions (usually 20-30 minutes are enough).
Some minutes before the ice cream is ready, add the remaining half glass of cold champagne to the sorbet and the whipped egg white.
Split up the sorbet into champagne glasses or Martini glasses and serve immediately.
Chef’s advices
You can decorate every glass with some slices of lemon and leaves of mint.
