Ingredients for 6 servings: 450 gr pears in syrup
Shortpastry:
300 gr flour
150 gr sugar
150 gr butter
1 egg
2 yolks
Lemon zest

Almonds custard:
125 gr almonds flour
225 gr sugar
1 egg
50 gr dried coconut
Custard cream:
175 gr milk
3 yolks
25 gr cornflour
80 gr sugar
75 gr cream
Vanillin
Ready in: about 40 minutes
How to prepare the recipe: "Pears tart with almonds custard":
Shortbread: place the flour and sugar mixed on a working surface. Put butter in flakes in the middle, egg, yolks, a pinch of salt, a tbsp of grated lemon zest (or a pinch vanillin). Mix and work the dough, wrap with plastic wrap and let it rest in the fridge for an hour.
Almonds custard: whisk all the ingredients.
Custard cream: make the custard following the recipe and the gently add and mix to the almonds custard.
Roll out the dough (disc-shaped) at 5 mm thickness, place into a mold (26 cm diameter), cover with baking paper and dry beans, place in the hot oven at 180°C and cook for 15 minutes. Remove the baking paper and beans, pour the custard onto the short pastry shell.
Cut the pears into thin slices, place them radial over the custard, cook in hot oven at 170°C for 20 minutes.
Remove from the oven, let it rest for 10 minutes and serve.
