Ingredients for 4 servings: For the dough:
450 gr white flour
150 gr sugar
80 gr butter
2 eggs
1 tbsp of baking soda
Milk
Extra virgin olive oil
Strutto (lard)
Salt
For the filling:
250 gr chestnuts
100 gr dark chocolate
50 gr almonds
50 gr candied fruit
1 organic lemon
Salt
For the decoration:
Icing sugar
Ready in: about 60 minutes
How to prepare the recipe: "Sweet ravioli with chestnuts and chocolate":
Into a big bowl mix the flour with the eggs, a pinch of salt, butter previously softned, sugar and some tablespoons of mik, enough to obtain a dough quite soft. Let it rest for about 1 hour, then add a spoonful of baking soda diluted in a little warm milk, mix well.
Boil the chestnuts into lightly salted water, spil and mash them; put in a bowl and and add the chopped chocolate, chopped almonds, candied fruit and the lemon grated rind. Mix well to obtain a mix of medium consistency.
Roll out the dough really thin (about 3 mm), place some equidistant spoonful of filling onto it and, with a round pastry cutter, get some ravioli that you will close half moon shaped.
Take a pan and warm the oil and lard equally; fry the ravioli and drain them once well golden.
Serve the ravioli really hot sprinkled with icing sugar.
Chef's advice
The baking soda can be used as raising agent. Infact in touch with an acid ingredient, like yogurt or lemon for example, it releases carbon dioxide which facilitates the rising.
I suggest to match this sweet with Barolo Chinato.
